two post's in one day :)

Lately people have been asking me why I don't put recipes on my blog anymore.. to tell u the truth I forgot I used to do that! so my new goal is to put one new recipe a week on my blog. I am all about great quick meals, seeing as I work all day and don't get home till seven I want something I can cook fast or leave in the crock pot all day. This last year I have been on a kick where I try at least one new recipe a week, and it has not failed me yet! ( well maybe once :) ).

So here is the recipe for this week:
Sweet and Spicy slow cook chicken
I love slow-cooker meals. They are easy, low-maintenance and usually quite delicious. This met all of the above criteria! Sweet and spicy shredded chicken served in flour tortillas with lettuce, cheese, tomatoes and sour cream. The chicken was moist and flavorful and was the perfect solution to a weeknight meal that needed something more than your average, everyday taco.




1 lb. boneless, skinless chicken breasts1

(14 ounce) can petite diced tomatoes, undrained

1/3 cup brown sugar

1/4 to 1/2 teaspoon crushed red pepper flakes

Coat the inside of your crock pot with non-stick cooking spray. Place all ingredients in the crock pot. Cook on high for 4-6 hours or on low for 8-10 hours, or until chicken shreds very easily with a fork. Season to taste with salt and pepper. (Chicken will absorb liquid after it is shredded.) Serve in tacos or however your little heart desires. I love serving the taco in the uncooked tortillas from Costco, they are the best!! you just heat them up on your stove for about 30 seconds!

Everybodys working for the weekend

I get a four day weekend! I am so excited yeah!!!! I get Saturday off and since Monday is a holiday we get paid so I get take Tuesday off so I don't get overtime, I'm loving life right now. I'm so excited to relax, hang out with family ( chases sister and her husband will be in town ), watch the big BYU game, and enjoy the rest of summer.
