So excited

I am so excited for this...

If you have not read these books you are missing out. I have been waiting all year for the third one to come out and its coming here at the end of the month!!!

Shade is closing.. it makes me so sad. I loved this store!!!

Last but not least I am so excited to make this tonight! Its raining and this is one of Chase's all time favorite soups I make so I thought I would share the recipe :) I make a few minor adjustments to make it a little healthier such as turkey bacon and fat free sour cream and cheese. But I would recommend trying the real recipe first with out modifications, best Baked potato soup ever!



Ingredients

  • 12 slices bacon cooked and crumbled
  • 2/3 cup margarine
  • 2/3 cup all-purpose flour
  • 7 cups milk
  • 4 large baked potatoes, peeled and cubed ( cook in oven first)
  • 4 green onions, chopped
  • 1 1/4 cups shredded Cheddar cheese
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Directions

  1. In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
  2. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

I am also looking forward to "Mockingjay". Aren't you glad I suggested the "Hunger Games" to you!? Sad about "Shade" because I know how hard it is to find modest shirts. The Soup recipe sounds delicious! Love ya!
