V-Day

I was so excited for Valentines day this year... cause it was the first time I have not worked on VDay for three years! ( except for last year cause it was a Sunday but same thing lol) So I laid in bed, read my book, the goose girl, which i loved and bought all her books after reading it in two days.

Chase walked in with flowers, chocolate and his cute little grin. Then we went and got a couple massages. Can I tell you how much I love massages! I got Chase hooked as well, its our own little treat to ourselves. He was jealous because I got the strong looking masseuse and his masseuse was like 90 pounds but he still said it was good. Chase then went and took a test while I did my Monday errands. That night we got Carrabbas to-go ( I hate eating at restaurants on valentines day cause I hate crowds) watched the bachelor and ate this amazing fruit pizza i made and got the recipe from one of my fav. food blogs melskitchencafe.com. Seriously it is one of the best fruit pizza's I have ever made! All in all it was a great day and just felt so nice to relax with each other. I hope everyone had a good day!


Fruit Pizza recipe

Dough:
1/2 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Zest of 1 lemon, divided (use the other half for the frosting)
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt

Frosting:
1 package (8 ounces) cream cheese, softened
2 tablespoons granulated sugar
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
Fresh lemon juice from 1 lemon (1-2 tablespoons)
Other half of lemon zest from above

Any of these Fresh fruits would be good:

Strawberries
Raspberries
Blueberries
Pineapple
Peaches
Kiwi

I just used strawberries. Preheat the oven to 350 degrees F. Spray a 10-inch tart pan with nonstick cooking spray. This will give a fairly thick crust. If you want a thinner crust, try using a larger pizza pan shape or a 9X13-inch pan

For the dough, in a large bowl, cream together the butter and granulated sugar until smooth. Mix in egg, vanilla, and 1/2 of the lemon zest. Add the dry ingredients and mix until just blended. Press the dough into the prepared pan.

Bake the dough for 10-12 minutes, or until very lightly browned. Don’t overbake as the crust will become dry. Cool the crust on a wire rack completely. In a medium bowl, beat the cream cheese until smooth. Add the granulated and powdered sugar, vanilla, lemon juice, and other half of the lemon zest. Spread on the cooled pizza crust to within 1/4-inch of the edges. Arrange fruit on top of the pizza. Cover lightly with plastic wrap and chill until serving time and enjoy! Chase ate the whole pizza in one day, that is how good this is! hahaha

So I love the Goose Girl and everything else she has written too. I will definitely be trying out your fruit pizza and GOOD FOR YOU for treating yourselves to couples massages. They don't come often enough.
